I heard a strange "beep" that occured suddenly while decelerating, not braking, at about 55mph in my
'67 122. It happened again several times but only when decelerating and just once at a time. Didnt sound like it was in a rotation.

New brakes, alternator and belt.

Any ideas on what could be causing this??

Something sucking in air when you lift off that shouldn't? Maybe a vacuum issue? If you lift off, get on the gas, and then lift off again does it do the same thing again (i.e. every time)?

Check the tension on the alternator belt.
