This usually happens when you shrink the original picture, or if you try to oversharpen it.
With a 5.1 camera you have a very big image, so I assume you are decreasing the size of it. If you make it too small (say 800x600) you will get jagged lines.

All of the above plus when I shoot cars, many times at the crease lines of th side of the car the pictures look like someone took a scissors on that line and cut little hash marks, very wierd.
