there are 3 hoses.

I want to move it so i can replace the engine mount...

how do I do this and not spill all over the place?

BTW do I need to remove the Cam gear cover to replace the engine mount?

Coolant tank is just held in by gravity, pick it up. Move it wherever out if the way, the stickies will have a lot of information and photos on doing your engine mount.

What they said. Cam cover doesn't need to come off for mount replacement. Make sure you don't mix up the bolts. The ones to the frame are different from the ones to the block

My old one after the first difficult attempt to lift it upwards (attached on the backside and passengerside on long flat hooks) came out quite easily after that point.

My new one was both INCREDIBLY difficult to get on I have a feeling I'm going to need leverage just to get it off if I ever need to in the future.

Just leave everything on and fold it over and rest on the engine. - also pay special attention to the engine level when putting in the engine side long bolts. They cross thread REALLY easily - should be able to put them in by hand a few turns first.
