I have stock 04 xc90 with factory 17's 235/60/17, out of curiosity does anyone know if 245/75/17 would fit without rubbing. Thanks!

you will have to keep in mind that moving to a different tire size can affect speedometer and traction control and AWD traction. Most manufacturers recommend no greater than a 3% change in total wheel rotation. There are several websites you can go to determine how to calculated your change in rotation.

It's a big difference in overall diameter, not much in width. Can't speak for rubbing, but IF they fit with enough gap space under the fender, perhaps it won't rub given the similar width.
But you'll need to check the clearance to the fender and to bottom plate of the strut. However, as mentioned above, the speedometer change is important

Stick to the largest that Volvo specify. Which is 20” wheels with 255/45. Then you are guaranteed no issues
