On occasion, if I'm coasting at a low speed and apply the brakes, the pedal will travel much farther than usual before engaging. It can be a surprising sensation to feel the pedal go past it's usual engagement point without feeling the brakes catch. The brakes always do engage, but it just feels like there's no pressure up to a certain point to catch when it should.
My indie mechanic couldn't find anything wrong, but the problem has since become more frequent.
Any ideas?

I would take it to a better mechanic who knows what they're doing. Even if now it always does brake, you may find yourself in a very bad spot if you discover one day it doesn't.
Broken brakes aren't something to mess around with!

Re: Funny brakes (Duett)

You need to change the fluid and BLEED them well.
If that doesn't help it's the master sylinder taking a very slow dump!
These cars all brake differently, some better than others. This is the Norm for this model (98-00).
Do a quick pump before you hit the brakes hard, if that helps and they feel fine it's one or the other (bleed and fluid or master cyl).
Also check your brake lines, many now are cracking and loosing their proper function
