Pretty soon I'm going to replace the front brake pads on my XC. I was considering going ahead and replacing the old brake fluid while I'm at it. Does it matter if I use a vacuum system at each wheel (one man brake bleeder) or do I need to use a pressurized system like iPD sells?

I have both and they both do the job. The pressurized system is a lot less work. The vaccum system costs less and you have check more often that you don't suck the fluid below the ABS. If air gets into ABS, may require connecting car to dealers computer to bleed. On the otherhand, the vaccum system is easier to clean up. I use the pressurized system when I do more then one car at the same time, vaccum on single small car.
