With really cold weather and not wanting to stop and start engine for a 2 minute trip to pick up my mail, I was wondering if there is any option of locking the car with the engine running? Also, if one leaves it running
will the car shut off if the someone tries to put it in gear (without the key fob being near the car)?

Couple of tricks to do this, but the easiest is to just remove the physical key from the fob. Lock all the doors (with you in the drivers seat). Exit the car (unlocks driver door). Lock the driver door from the outside with the physical key. Done. (Use same to unlock when you return).
Thanks. Warpedcow. That might be the easiest, using the small "key" on the fob.

Use the VOC app, no key needed, to start engine , the car must be locked to do so. Set how long to run (1-15 mins).

Not going to spend $500 for the Remote Start App. I tried using the "key" from the fob, but that is not convenient as you have to pop off the door handle cover to access the door lock. So probably no easy option.

Wait, you call that "hard"? It takes about one second to pop on and off...

If you really want to avoid that you can try this:

1. Engine running, driver in driver's seat, remote key fob in hand/pocket (not in car).
2. Lower driver's window
3. Exit vehicle
4. Shut door
5. Reach through open window and hit the door lock button on the inside of the door
6. Reach through window and hit the "auto up" power window button.
7. Window will raise, everything locked, driver and key outside
8. Realize this is a much bigger faff than just using the key in the procedure I mentioned earlier :)
For me, pulling off the key lock cover is only going to wear those retaining tabs and over time may make that cover pop off easier, and I would not want to loose that. Also pulling out that key and re-inserting it will all
take about the same time as the window/power lock procedure and I think I'll try that as that seems easier than the cover removal procedure. Thanks!

I just tried the "roll window down, reach in hit lock button and hit AUTO close window" and that was really quick and easy. When returning, touch door handle it and it unlocks the door. Much easier than removing lock cover and locking and unlocking door.
